I don’t know about you, but for me, the holidays are the perfect time to enjoy long breakfasts around the table with the people you love. It’s all about quality time, good food, and being able to slow down a little bit. And it’s especially around the holidays we always have a little something extra on the breakfast table, including the most delicious egg salad! It might not look the best, but I promise you, it tastes amazing! 🙂
Here’s what you need to make a big jar;
Ingredients
9 large eggs – 2 packs of real mayonnaise – 1 onion – a splash of pickle juice – 4 slices of pickle chopped in small pieces
Directions
Add the eggs to a saucepan and fill with water. Bring water to a boil and let them cook for 8 minutes. Once done, take the eggs out of the water and let cool. Peal and chop the eggs and add them to medium size bowl. Add the mayonnaise, pickle and pickle juice, onion and mix it together. Taste once mixed together and adjust if you need more pickle juice or onion, this varies depending on your taste preference. Store in a class container and keep in the refrigerator. Properly stored, it will last for 3-5 days in the refrigerator (but it’s long gone before then in our house, hehe).
